Paella is the most representative dish of Spain's cuisine. Its hometown, Valencia, a beautiful port in the Mediterranean is an important rice-producing area in the country since this ingredient was introduced by the Moors over 1200 years ago.

This typical dish was initially a countrymen's meal and it was cooked for lunchtime over a wood fire and eaten directly with a spoon from the cooking pan also called Paella. It is actually said that the name came from the Latin 'Patella' meaning pan.

To exactly define the ingredients contained in this exquisite dish is almost impossible due to the wide variety of preparations, however the original Paella Valenciana is cooked with round grain rice, saffron, peas, rabbit, a mixture of green beans (called  bajoqueta and tavella), and in some cases duck with butter bean, all prepared in the classic olive oil with chicken broth.
